This weekend I baked those yummy Healthy Chocolate Banana Bread Muffins and it was a success ! We might have had a little too much but there were so good and healthy so I forgot to feel guilty!
As usual, the recipe is super simple, for about 12 muffins you will need:
- 4 ripped bananas
- 1 & 1/2 cup Oats Flour
- 1/4 Coconut Oil
- 1/3 cup of sweetener of your choice
- 1 egg
- 1 tsp vanilla extract
- 1 tsp baking soda
- 1 tsp baking powder
- 1/4 tsp salt
- 1 tbsp unsweetened chocolate powder
- chocolate chips
Pre heat the oven to 350°F ( 175°C).
In a large bowl, mashed the bananas into a purée.
Then add all the remaining ingredient and mix with a kitchen hand mixer.
In a muffin tin spray some oil if required, I use the in silicone so I don’t need to!
For each muffin : add one tablespoon of the mix, top up with few chocolate chip and add a second tablespoon of the mix and top again with few chocolate chips!
Bake for 25 minutes at 350°F ( 175°C).
